<h2 class="style172" style="text-align: center;">Bodega Bay Bouillabaisse</h2>
<h4 style="text-align: center;">Compliments of:  Executive Chef Ken Schloss, Inn at the Tides, Bodega Bay, CA</h4>
<h3 class="style172">What you&#8217;ll need:</h3>
<h3 class="style172">1 lb. Live lobster, tail sections and claws, cleaned and cracked</h3>
<h3 class="style172">1 lb. Dungeness crab, cleaned and cracked</h3>
<h3 class="style172">24 each - raw shrimp, cleaned peeled and deveined</h3>
<h3 class="style172">18 each - mussels, washed</h3>
<h3 class="style172">1/2 cup lean smoked ham, julienne</h3>
<h3 class="style172">8 medium tomatoes, seeded and diced</h3>
<h3 class="style172">1 lemon, juiced</h3>
<h3 class="style172">**1 Qt. Fish Stock (lobster body and shrimp shells are used in stock)</h3>
<h3 class="style172">1 cup dry white wine</h3>
<h3 class="style172">2 medium red bell peppers, diced</h3>
<h3 class="style172">1 cup onions, diced</h3>
<h3 class="style172">2 Tbs. garlic minced</h3>
<h3 class="style172">2 bay leaves</h3>
<h3 class="style172">1/8 tsp. saffron threads</h3>
<h3 class="style172">1 tsp. salt, fresh ground pepper</h3>
<h3 class="style172">3 Tbs. chopped fresh parsley</h3>
<h3 class="style172">What you do:</h3>
<h3 class="style172">-In a heavy stockpot or casserole, saute the onions, garlic and red bell peppers until soft.</h3>
<h3 class="style172">-Add the smoked ham, tomatoes, bay leaves, saffron, salt &amp; pepper.</h3>
<h3 class="style172">-Add the stock, wine, and lemon juice and cook for ten minutes</h3>
<h3 class="style172">-Add the shellfish, cover and cook for an additional 15 minutes.</h3>
<h3 class="style172">-Remove from heat and add chopped parsley.</h3>
<h3 class="style172">Serve immediately &amp; ENJOY!!!</h3>
<h3 class="style172">*Note: seafood may be substituted based on availability.</h3>
<h3 class="style172">**Simple Fish Stock Recipe:</h3>
<h3 class="style172">2 whole white fleshed fish, 1 Lb each</h3>
<h3 class="style172">1/2 cup dry white wine<br />
8 cups water<br />
1 carrot, peeled<br />
1 onion, peeled<br />
1 celery stock<br />
6 parsley stems without leaves<br />
6 thyme sprigs or 3 rosemary sprigs<br />
1 tsp black peppercorns<br />
1 bay leaf</h3>
<h3 class="style172">In a large stock pot, combine fish frames and heads (reserving fillets for later), wine, water, carrot, onion and celery. Cover and bring to a boil.</h3>

<h3>Turn down the heat to medium, uncover, and simmer 20 minutes skimming the foam that rises to the top.</h3>
</li>
<li class="style172">
<h3>When the foam stops rising, add parsley stems and thyme sprigs, peppercorns, and bay leaf. Simmer gently uncovered 20 more minutes. Take off heat. Strain in a colander pressing hard on the solids. You should end up with about 6 cups of stock.</h3>

<p>Before we get to the juicy part about <a class="wpGallery" title="About:  Venus - the goddess of love and beauty" href="http://en.wikipedia.org/wiki/Venus_(mythology)" target="_blank">Venus - the Roman goddess of love, beauty, and fertility&#8221;</a> using the fish stew - &#8220;Bouillabaisse&#8221; to lull her husband to sleep so she could cheat on him with <a class="wpGallery" title="Mars - Roman god of war" href="http://en.wikipedia.org/wiki/Mars_(mythology)" target="_blank">&#8220;Mars - Roman god of war&#8221; </a>- let&#8217;s take a quick look at the current information on the<a class="wpGallery" title="Journal of the American Medical Assoication" href="http://jama.ama-assn.org/cgi/reprint/296/15/1926.pdf?debugMode=false" target="_blank"> health benefits of eating a variety of cooked seafood</a>:</p>
<p>According to The USDA&#8217;s 2010 Nutrition Evidence Library (NEL) &#8220;Moderate, consistent evidence shows that health benefits derived from the consumption of a variety of cooked seafood in the US in amounts recommended by the Committee outweigh the risks associated with methyl mercury (MeHg) and persistent organic pollutants (POPs) exposure, even among women who may become or who are pregnant, nursing mothers, and children ages 12 and younger. Overall, consumers can safely eat at least 12<span class="Glossary" onmouseover="coolTip(this,unescape(this.getAttribute('definition')), 300);">oz</span> of a variety of cooked seafood per week, provided they pay attention to local seafood advisories and limit their intake of large, predatory fish. Women who may become or who are pregnant, nursing mothers, and children ages 12 and younger can safely consume a variety of cooked seafood in amounts recommended by this Committee, while following Federal and local advisories.&#8221;</p>
<p>A great fish dish that is as easy to make as it is delicious is Bouillabaisse - a seafood stew originating from the Provence region in southern France where as the story goes &#8220; local mariners would cook the stew in cauldrons along the beach with their fresh catch of fish unsuitable for the market.  The dish typically included a combination of  rockfish, shellfish, mussels and crabs, and is flavored with olive oil, salt, pepper, fresh herbs, etc.  The ingredients for bouillabaisse change according to whatever the fresh seafood options are for the area in which it is made.&#8221;</p>
<p>Now while there at least a few authorities who agree the &#8220;mortal&#8221; birth place of was the Vieux-Port, of Marseille, located on the south east coast of France on the  Mediterranean - I found an entertaining little &#8220;story&#8221; from Roman Mythology on how <a class="wpGallery" title="About:  Venus - the goddess of love and beauty" href="http://en.wikipedia.org/wiki/Venus_(mythology)" target="_blank">Venus - the Roman goddess of love, beauty, and fertility&#8221;</a> served bouillabaisse to her husband <a class="wpGallery" href="http://en.wikipedia.org/wiki/Vulcan_(mythology)" target="_blank">Vulcan</a> in order to lull him to sleep while she consorted with <a class="wpGallery" href="http://en.wikipedia.org/wiki/Mars_(mythology)" target="_blank">Mars</a> - the Roman god of war.&#8221;</p>
<p><em>Hmmm </em>- now exactly what Venus was<em> doing </em>with Mars - the story does not go on to say, yet from what is being depicted in the art image above, it looks like Volcan definitely caught on to Venus&#8217;s &#8220;bouillabaisse antics.&#8217;</p>
<p>Although an interesting notion, I&#8217;m not suggesting you make bouillabaisse to put someone to sleep - in fact - after making this seafood stew on <a class="wpGallery" title="California Living with Aprilanne" href="http://www.CaliforniaLiving.tv" target="_blank">&#8216;California Living with Aprilanne&#8217; </a> - I thought it may be the perfect dish for someone to make if they were  looking to get married and &#8220;seal the deal!&#8221;</p>
<p>If you are already married, or looking to spice up things with your significant other with a cozy, stay in &#8220;date night&#8221; here&#8217;s a suggestion - (if you have children - get the sitter to <em>take the kids out)</em> open a bottle of your favorite red and nibble on a few red pepper slices and hummus dip while making this hearty seafood stew together.  Once all done and bubbly- serve it hot with a good <a class="wpGallery" href="http://en.wikipedia.org/wiki/Pinot_noir" target="_blank">Pinot Noir</a>, a green salad, some crusty french bread  - and &#8230;<em>perfecto</em> - I guarantee it will be a night to remember!</p>

<p>When things starts heating up outside it&#8217;s our cue to fire up the grill and start cooking outdoors!  Now while I&#8217;m not aiming to be a total killjoy here - it is important to report that the process of cooking meat, poultry and fish on the grill has been proven to cause the formation of carcinogens known as HCAs (Heterocyclic Aromatic Aminies) and PAH&#8217;s (Polycyclic Aromatic Hydrocarbons).  We all love to BBQ, and cooking on the grill is a quick, easy, and fun way to prepare meals - so here are a few steps you can take to decrease the cancer risk when grilling:</p>
<p>1. Use fruit marinades such as orange, lemon, lime, etc., and anti-oxidant rich herbs and spices such as cumin, rosemary, oregano, etc., and marinating meats and poultry at least an hour before cooking to reduce carcinogenetic damage up to 90%!</p>
<p><span style="FONT-FAMILY: Arial; FONT-SIZE: 10pt; mso-fareast-font-family: 'Times New Roman'; mso-ansi-language: EN-US; mso-fareast-language: EN-US; mso-bidi-language: AR-SA">2. Using fresh foods such as garlic, onions, rosemary, tomatoes, etc. that contain antioxidants to protect one’s DNA from the carcinogenic damage caused by the Heterocyclic Aromatic Amines HCA’s and Polycyclic Aromatic Hydrocarbons – PAHs formed when grilling meats, poultry, and fish.</span></p>
<p><span style="FONT-FAMILY: Arial; FONT-SIZE: 10pt; mso-fareast-font-family: 'Times New Roman'; mso-ansi-language: EN-US; mso-fareast-language: EN-US; mso-bidi-language: AR-SA">3. Cooking in tinfoil to prevent the fat drippings and subsequent production of PAHs that are deposited back onto the food by smoke and flare-ups.<br />

<p>It&#8217;s that time of year again when the temptation to go a &#8220;diet&#8221; can be so strong many people find themselves with all good intentions to eat right and loose weight throwing caution to the wind and going on the latest and greatest &#8220;fad diet&#8221; out there. </p>
<p>Naturally your intentions to eat right, exercise, and loose weight are admirable <em>and </em>with adherence to the proper diet plan will ultimately deliver success.  The problem is, most &#8220;fad diets&#8221; can be disguised as &#8220;quick weight loss  miracle plans&#8221; which may unfortunately set people up for failure from the get-go because they are too rigid, promise unrealistic outcomes, and/or do not have the proven scientific research behind them to support their outrages weight loss promotion claims.   So how can one distinguish between a fad-diet and a wholesome, healthy weight loss strategy? If a diet you are considering has any or all of the following components proceed with caution:</p>
<h4>Tell-tale Signs of a &#8220;Fad-Diet:&#8221;</h4>
<p>1.   The diet offers inflated marketing claims of ultra-quick weight loss (more than a few pounds a week).</p>
<p>2.  The diet restricts certain food groups completely - &#8220;No carb&#8221; diets fall into this category which recommend you eat a diet full of health harming saturated fats in the form of eating all the full fat cheese, dairy, and animal proteins you want while eliminating heart healthy grains and legumes, and health promoting fruits and veggies.</p>
<p>3.  The diet requires you to consume specific foods only such as eating only grapefruits, bananas, cabbage soup, all liquids, or large quantities of fat and protein for extended periods of time for instance.</p>
<p>4.  The diet requires dieter to purchase specific weight loss supplements, drink powders, prepackaged foods and bars, etc. which can be an impractical  &#8220;eating lifestyle&#8221; to adhere to and/or maintain over a long period of time. </p>
<p>5.  The diet does not promote exercise and claims you do not need to be physically active to loose weight on the diet.</p>
<p>While the above list is rather abbreviated to get the message out to avoid &#8220;fad-diets&#8221; like the plague - it does encapsulate nicely the top &#8220;diet pitfalls&#8221; to avoid when considering a diet plan to loose weight.  To complete the picture, below are the signs of a healthy diet - one that will offer you the most rewards for your efforts and the best results in your quest to loose weight and feel great this season:</p>
<h4>Attributes of a Healthy Weight Loss Plan:</h4>
<p>1.  The diet allows you to eat all of the food groups in moderation - without limiting your intake of food groups that are proven to enhance and longevity such as fruits and vegetables, beans and legumes, whole grains, etc.</p>
<p>2.  The diet plan is one that you can sustain (stay on) for long periods of time - ask yourself:  &#8220;will I be able to easily stay on this diet plan for &#8220;the rest of my life?&#8221;  If the answer is &#8220;yes&#8221; you may have found the perfect diet plan for you as long as it includes the rest of the points on this list!</p>
<p>3. The diet encourages the use of functional foods and healthful herbs, spices, servings of organic fruits, vegetables, nuts, lean protein sources such as chicken, eggs, and wild caught cold water fish, etc.</p>
<p>4.  Consumption of good fats such as monounsaturated fats  found in nuts, olives/olive oil, and fatty fish such as salmon for your omega 3&#8217;s are encouraged as part of a healthy eating plan.</p>
<p>5.  Exercise is promoted and required daily/weekly to keep you healthy and help you burn calories in order to loose weight.</p>
<p>The information in the above list has also been provided in an abbreviated fashion in order to get the message of  &#8220;healthy dieting&#8221; out there, and while loosing weight is not easy for many people the following simple, tried and true weight loss formula will help you in reaching your weight loss success goals:</p>
<p style="background: white;"><span style="color: #333333;">ENERGY IN - (minus)  ENERGY EXPENDED = CALORIES/WEIGHT LOST OR GAINED. </span></p>
<p style="background: white;"><span style="color: #333333;">Calories/Energy consumed in the form of food - minus - Calories burned through exercise/activity equals = Calories/Weight lost or gained depending on whether a caloric deficit or surplus is created.</span></p>

<p>Aprilanne Health Tip:  This recipe for Fresh Tomato Sauce is easy, quick, and makes a tomato sauce so incredibly tasty for spaghetti, pizza, and Italian baked dishes you will never suspect it is actually good for you!</p>
<p>Tomatoes are a major source of the Antioxidant Lycopene which is thought to reduce the risk of Cancer by 40 % - notably prostatem lung, and stomach cancer and increase survival.  Here&#8217;s an interesting tip - concentrated tomato sauces like the ones found on pizza and in pasta sauce have FIVE time more lycopene than fresh and canned and jarred tomato sauces have THREE times more the antioxidant value of lycopene than fresh tomatoes so there is no excuse to always have this power-food on hand any time you want or need a lycopene boost! </p>
<h2 style="text-align: center;">Fresh Tomato Sauce </h2>
<h5 style="text-align: center;">Compliments of Graziano Ristaurante &amp; Vodika Lounge, Petaluma, CA </h5>
<p><strong>1. Cut a small X on top of 4 ripe, large, on the vine tomatoes - place in boiling water</strong> (boil for approx. 2 minutes to blanch - remove from water and pull off skin - dice.</p>
<p class="style24"><strong>2. Place approximately 1/4 cup of extra virgin olive in a large saute pan and saute 3 large shallots, minced. </strong></p>
<p class="style24"><strong>3. Once onions are clear in color - add diced tomatoes to pan - one 8 oz. glass of white wine and approximately 8 oz. of water.</strong></p>
<p class="style24"><strong>4. Add 1 bunch loosely cut fresh basil and 2 tsp. each sea salt and black pepper.</strong></p>
<p class="style24"><strong>5. Simmer about 2 hours - the longer it cooks the thicker the sauce will be.  </strong></p>

<p><a class="wpGallery" title="Science Daily - Buying Esperiences, Not Possessions, leads to greater happiness" href="http://www.sciencedaily.com/releases/2009/02/090207150518.htm" target="_blank">Research </a>suggests people will gain more lasting benefits from spending on  experiential purchases than from buying material objects - interesting huh.   Some may disagree pointing out that taking a ride in the country in a spankin&#8217; new BMW will bring far more enjoyment that taking a ride in the country in an old pick-up, and that a picnic on champagne and caviar will give you more happiness than a picnic of bread and water.  In both examples, the amount of money invested in the &#8220;objects&#8221; enhanced the &#8220;experience&#8221; proportionately.  While these may &#8220;technically&#8221; be valid points - proponents of this line of thinking may be missing the basic point.</p>
<p><a class="wpGallery" href="http://www.accumulatingmoney.com/spend-your-money-on-doing-things-rather-than-owning-things/" target="_blank">AcumulatingMoney.com </a>explains it quite simply: &#8220;people receive more <em>enduring </em>pleasure and satisfaction from investing in life experiences than material possessions.&#8221;   &#8220;We don&#8217;t get bored of happy memories like we do with a material object.&#8221;</p>
<p>For example, taking a surfing lesson will give you much more to remember and chat up with your friends about than buying a new shirt or pair of shoes will - which can easily cost the same amount.  New experiences such as taking a cooking class, a horse back ride on the beach, or going scuba diving for instance, will provide more residual positive memories to share with others than a new car ever will.</p>

<p>That said, other factors do come into play when we are dealing with a person&#8217;s desire or <em>need</em> for material things - such as a person&#8217;s development level of thier self-worth, and where they find themselves on the <a class="wpGallery" title="Maslow's Hierarchy of Needs" href="http://en.wikipedia.org/wiki/Maslow's_hierarchy_of_needs" target="_blank">Maslow&#8217;s Hierarchy of Needs </a>Pyramid.</p>
<p>For instance, a person seeking &#8220;self-esteem&#8221; and &#8220;respect by others&#8221; -qualities listed on the green tier in the pyramid,  may not buy into the notion that &#8220;experiences are better to invest in than material things&#8221; since they are still trying to achieve &#8220;self-actualization.&#8221; Perhaps that new &#8220;benz&#8221; is the just the &#8220;vehicle&#8221; that will get them where they <em>need<strong> </strong></em>to be (in their mind anyway).  A person without a job, or lacking the security of a safe home environment cannot be expected to lay out the ching for a &#8220;beach getaway&#8221; over investing in a new outfit for job hunting, or paying a higher rent in order to live in a safer neighborhood.</p>
<p>My conclusion on the concept that &#8221; Buying Experiences, Not Possessions, Leads to Greater Happiness&#8221; is that it really depends on where a person is in their lives in order to be able to acknowledge, understand, and<strong> </strong><em>appreciate<strong> </strong></em>the simple pleasures of everyday <em>life.</em> On any given day we can experience the  sound of singing birds, see the beauty of the sun rise, inhale the sweetness of a rose, and feel what it&#8217;s like to be in love&#8230;.all free experiences for the taking.</p>
<p>A  homeless person on the street may not enjoy a sunset the same way a person would enjoy the same exact sunset from their steamy hot tub sipping a cold drink.   To the person on the bottom tier of Maslow&#8217;s pyramid  - this suset may represent the closing of another day in hell on earth, with the anticipation of yet another cold, homeless night ahead to endure.  To a &#8220;self-actualized&#8221; person - this sunset could symbolize the perfect ending to another day in<em> paradise</em>, with the promise of more great things to come - it&#8217;s all about <a class="wpGallery" title="Meaning of the word &quot;perception&quot;" href="http://en.wikipedia.org/wiki/Perception" target="_blank">&#8220;perception&#8221;</a> really.</p>
<p>Stress, among other factors, can take a toll on a person&#8217;s happiness, and the act of getting out and &#8220;experiencing&#8221; in itself is a great way to take one&#8217;s mind off some of those things bogging them down.  Since &#8220;money&#8221; or the lack of it is a common theme these days - spending &#8220;quality time&#8221; with nature, family, and friends may be a great way to enjoy life ~ without the guilt spending money can bring.  So maybe it&#8217;s time to take that hike you&#8217;ve been meaning to go on, enjoy that ride in the country, or spend a day at the beach&#8230;or do what ever it is that makes YOU happy - because after all is said and done one age old adage still rings true - <em>&#8220;the best things in life are free.&#8221; </em>Enjoy ~ Aprilanne</p>
